Bottle variation: the dirty secret of the wine trade

When a consumer buys a bottle of a certain wine, there is no guarantee that they will have the same experience with that wine as they did on a previous occasion. Bottle variation bedevils the wine industry, but it is rarely discussed. This session looks at the different sources of bottle variation, attempts to assess their impact, and makes suggestions about how things can be improved. In particular, the control of oxygen is a key factor in how wines develop, and inconsistencies in bottling procedures and wine closures are likely an important source of bottle variation.
